NUTTY BLUEBERRY VEGETABLE SALAD

A salad! How often do you think of accompanying your meal with a salad? Previously, I only thought of salad as being an accompaniment when you have a comprehensive dessert meal. I was accustomed to having soups such as creamy basil tomato carrot soup, butternut squash soup among many other types of soups. But that’s not the case any more. Ever since I made this nutty blueberry vegetable salad, it changed my believe for salads. It got me thinking, girl, you have been missing a whole a ton in your meal.

This nutty blueberry vegetable salad gave me the salad cravings and this days I have a salad as part of my meal However, haha, at times, I get to the house and the only thing I want is to chill with a movie as I await for my beloved series “Money Heist” to make a comeback on it’s third season. That series is definitely one to look out for 😁.

Ingredients
  • 1 Bulb of Onion
  • 1 of Courgette
  • 1 Carrot
  • 1 Capsicum (green Hoho/ bell pepper)
  • 1/2 a Lettuce
  • A Bunch of Fresh Blueberries
  • Peanuts
  • 2 Tbsp of Mayonnaise
Instructions
  1. Begin by washing clean all your vegetables.

  2. Next, chop your onions and capsicum into small diced sizes.

  3. Chop your courgettes into ripple like shaped sizes.

  4. Cut your carrots into thin sized strips.

  5. Finally chop your lettuce into very small sized pieces.

  6. In a separate bowl, pour in all the ingredients including the peanuts and a few blueberries and mix them all together. (Leave some other chopped courgettes and blueberries aside which will be used for garnishing)

  7. Sprinkle a pinch of salt into the ingredients and then add 2 tablespoons of the mayonnaise and mix it in with all the other ingredients.

  8. Once properly mixed set is aside. On a separate serving bowl, line the bowl with the outer lettuce cover that was left behind while cutting out the lettuce.

  9. Once the serving bowl is well lined, add in your mixed salad and then it’s time for garnishing.

  10. To garnish the serving bowl, place the remaining courgettes on the side corners of the bowl and the blueberries place them strategically at the top of the bowl as shown in the video below.
