Wash the mango and cut it into a half. Cut one of the halves into small pieces and add the pieces into the blender and using very little water, blend the mango to produce mango juice and pour it out into a cup. (Do not add sugar into the juice) Set aside the mango juice.
Wash the plums, peel and remove the seeds and cut the plums into small pieces. In a pan, pour in the plums and add 1/4 cup of water. Cover and simmer the plums until it thickens. Remove from the pan and leave it to cool.
In a mixing bowl, mix the self-raising flour, cinnamon and sugar (optional) together.
In a separate bowl, break in the eggs and mix it with 1/4 cup of milk, the plum pulp and 1/2 a cup of the blended mango juice.
Pour in the wet ingredients into the bowl containing the flour mixture. Mix together until it forms a thick smooth paste. You can add water a little bit at a time if it's still too thick.
Heat up your pan and add in some butter or 1 tbsp of cooking oil. Using a scoop or serving spoon, pour in some of the paste into the pan and allow it to cook for about 2-3 minutes on each side before flipping onto the other side.
Once cooked on both sides, remove the pancake from the pan and set it aside on a plate. Do the above step until all your pancakes are well cooked and ready for eating.
Serve the pancakes with plum or diced up mangoes or even sprinkle them with plum jam.
