HOW TO MAKE MANGO-PLUM CINNAMON PANCAKES

I cannot be more excited right now, that it’s the mango season here in Kenya. The season when mangoes are very juicy (yummy!) and sweet and they are in plenty in the market. Not a day can pass-by during this season without me having a bite from a mango. Since I had many mangoes with me, that we came with from Upcountry after the Christmas period, I thought of a way to use them up to ensure they do not become rotten. I thought of blended juice or a smoothie , however, with all the drinks we had during the festive season, we had to have something different.

Luckily, there were plums in the kitchen that I had bought during the week. How could I utilize both of them at the same time? I thought ? . Aha! pancakes came to mind. And that my loves, is how the mango-plum cinnamon pancakes came to be. Let’s dive into the kitchen and start preparing them.

Ingredients
  • 1 1/2 Cups of Self-Raising Flour
  • 1 Ripe Mango
  • 1 Cup full of Plums (the darker the cover of the plum, the sweeter the plum)
  • 3 tbsp of Sugar (Optional), (You could leave it out, if you want to retain the natural taste of the fruits)
  • 1/4 tsp of Cinnamon
  • 2 Pieces of Eggs
  • 1/4 Cup of Milk
  • Some Cooking Oil
  • 1 Cup of Water
  • A Blender
Instructions
  1. Wash the mango and cut it into a half. Cut one of the halves into small pieces and add the pieces into the blender and using very little water, blend the mango to produce mango juice and pour it out into a cup. (Do not add sugar into the juice) Set aside the mango juice.

  2. Wash the plums, peel and remove the seeds and cut the plums into small pieces. In a pan, pour in the plums and add 1/4 cup of water. Cover and simmer the plums until it thickens. Remove from the pan and leave it to cool.

  3. In a mixing bowl, mix the self-raising flour, cinnamon and sugar (optional) together.

  4. In a separate bowl, break in the eggs and mix it with 1/4 cup of milk, the plum pulp and 1/2 a cup of the blended mango juice.

  5. Pour in the wet ingredients into the bowl containing the flour mixture. Mix together until it forms a thick smooth paste. You can add water a little bit at a time if it’s still too thick.

  6. Heat up your pan and add in some butter or 1 tbsp of cooking oil. Using a scoop or serving spoon, pour in some of the paste into the pan and allow it to cook for about 2-3 minutes on each side before flipping onto the other side.

  7. Once cooked on both sides, remove the pancake from the pan and set it aside on a plate. Do the above step until all your pancakes are well cooked and ready for eating.

  8. Serve the pancakes with plum or diced up mangoes or even sprinkle them with  plum jam.

There we have it, within few minutes you can enjoy this mango-plum cinnamon pancakes with your family and friends. I love this pancakes because they get to satisfy your sweet and sour cravings at the same time. That time when you feel like really chewing down something sweet and sour, this actually pays off. The sweetness attributed by the mangoes and the sour taste by the tartness of the plums. You can cook it up for breakfast or have it with your 4 o’clock tea/coffee.
