GRAPE CINNAMON PANCAKES

I get too excited when I am going to prepare pancakes for breakfast. I honestly do love pancakes, I call them my first love with the kitchen. That first spark that warms up your heart and you can never let it go. That’s what pancakes do to my heart. I remember when I was young and whenever I would come back from school and found my mom at home preparing pancakes I would drop my bag and find myself flying to the kitchen and getting myself comfortable on the kitchen counter-top to watch my mum prepare them for the beloved 4 o’clock tea enjoyed in Kenyan homes , the chai ya saa kumi. I love pancakes because they are super easy to prepare and the number one thing that I love about them is that they take up flavors easily, allowing you to taste and enjoy every bit of your pancake.

This period in time, you cannot fail to spot fruit vendors selling grapes on the streets as they are in season. I as a lover of grapes could not resist stopping to buy a couple of grapes to carry along as I head home. While relaxing and invoking my creative side, as I am currently on a personal journey and mission to create my own unique recipes at least once a month for you my lovely readers, I decided to put my grapes into use and needless to say I jumped into the kitchen and what came into mind was my first love, pancakes and I could not hold my curiosity to taste how the pancakes would turn out to be. The end product was mind blowing, the grape cinnamon pancakes were super delicious and tasty. Every bite of the pancake left me wanting more and more of the pancakes. That is how, these grape and cinnamon pancakes came to be, which are my first ever own and unique recipe to create. They are very sweet and tantalizing and you will never want to skip breakfast again when you know you will be having this grape cinnamon pancakes.

Ingredients
  • 2 Cups of Self Raising Four
  • 1/2 a Bunch of Grape fruits
  • 3 tbsp of Sugar
  • 1 tbsp of Cinnamon
  • 2 Eggs
  • 1 Cup of Milk
  • 1 Blender For the Grapes
  • 2 tbsp Cooking Oil
Using Whole Purpose Flour
  • 2 Cups of Self Whole purpose flour
  • 1/4 tspn of Baking Powder
  • Include All Other Ingredients Above
Instructions
  1. Wash the grape fruits and add them in a blender and using very little water, blend the grapes to produce grape juice and pour it out into a cup. (Do not add sugar into the juice)

  2. Once all the dry ingredients are well mixed, break the eggs in the bowl and mix it with the ingredients. 

  3. Add in the grape juice and milk into the bowl and and mix all the ingredients together to form a smooth paste. (If it's too thick add some water into it).

    Let the ingredients rest for 5 minutes if you used the whole purpose flour to allow the baking powder to rise.

  4. Using a scoop or serving spoon, pour in some of the paste into the pan and allow it to cook for about 2-3 minutes on each side before flipping onto the other side.

  5. Once cooked on both sides, remove the pancake from the pan and set it aside on a plate. Do the above step until all your pancakes are well cooked and ready for eating.

  6. Serve the pancakes with some grapes on them and to spice it up, you can drizzle some maple syrup or chocolate syrup

Within a short period of time, you have your grape cinnamon pancakes with you ready for enjoying with your family and storing in your tummy. The beauty of this is that it is full of flavor and if you feel like you need some touch of that wine taste in the morning, these grape cinnamon pancakes will do just that without forcing you to take some actual wine for a normal working day. Do not allow this grape season end without doing something exceptional for your family and packing some of the grape cinnamon pancakes for your friends to work or to school. You could also try out the scotch pancakes.
