CUMIN CURRY GREEN PEAS (MINJI)

Green peas have been one of those legumes I fell in love with from the time I was young. I remember for my mum, almost all meals had to have a touch of minji into it to make it a wholesome meal from beef stews, to mukimo’s and even matoke. To this day, green peas still remains one legume, that comes to mind whenever I want to make a simple stew that is quick to prepare. 

Lately, I have been experimenting on different flavors to incorporate into my minji stews and I came up with what I call cumin curry green peas, easy to prepare and sweet ensuring all spices can be tasted when eating. The first time I served a friend this meal, they did come back again requesting me to prepare it again for them and even requested for the recipe. Loving all of you, my kitchen loves, I decided to share the recipe with you and I will be glad to hear your feedback on it.

Ingredients
  • 2 Cups of Green Peas
  • 2 tbsp of Cooking Oil
  • 1 Red Onion
  • 3 Pieces of Garlic Cloves
  • 1 Bunch of Dhania (coriander)
  • 2 Tomatoes
  • 1 Piece of Green Bell Capsicum
  • 1 Piece of Courgette
  • 3 Carrots
  • 1/4 tsp of Black Pepper
  • 1/4 tsp of Paprika
  • 1 tbsp of Cumin Powder
  • 1 1/2 tbsp of Curry Powder
  • 1 tbsp of All Purpose Seasoning (Royco)
  • 1 tbsp of Tomato Paste
Instructions
  1. Boil the green peas for about 30 minutes or until cooked.

  2. Cut the the vegetables (onions, capsicum, courgette, carrots and dhania (coriander) into small cubed pieces.

  3. Crush the garlic

  4. Once the peas are boiled and ready, in a sufuria add the cooking oil and allow it to heat up for 1 minute.

  5. Add in the onions and fry for some few minutes until it is golden brown.

  6. Add in the crushed garlic and half of the dhania (coriander) and cook for about two minutes

  7. Sprinkle the black pepper and add in the capsicums, courgettes and carrots into the sufuria and stir. Allow them to cook, ensuring they do not overcook.

  8. Once they are ready add in the tomatoes and the tomato paste and allow to cook until it forms a thick paste.

  9. Add in the paprika, cumin powder, curry powder and leave it to infuse into the food for five minutes

  10. Add in the green peas and the all purpose seasoning powder and leave it to cook together with the other ingredients for 10 minutes until ready. 

  11. Once ready, add the remaining dhania (coriander) to garnish the food.

  12. Remove and serve with your most preferred starch either rice, chapati, mashed potatoes.

Once ready serve up with your favourite starch either Turmeric ginger vegetable fried rice or Swahili pilau or .  I served mine with chapati. I would be glad to hear your feedback on how you found this meal.  Share the meal with friends and let’s all enjoy some simple easy and delicious meal.
