CREAMY FRENCH BEANS MASHED POTATOES

Creamy French Beans Mashed Potatoes is a meal that has become one of my favourite meals to cook up. After a long tiring day, there are times, I simply want to cook up a meal that won’t require too many ingredients and with very minimal spices and simply relax and watch some movies.

Recently, I had one of those feelings tired from class and all I wanted to do was eat and relax with a series I have been watching for sometime now on Netflix, The Breaking Bad. This series has blown my mind away, by seeing how one situation can crack up your thinking capability and make you explode to a level of success never imagined. This is exactly what happened to Walter White. Haha, well, enough of the spoilers. Now, that’s what I was awaiting eagerly to continue watching as I relax with a glass of my Wildcard Smoothie but not on an empty stomach.

I went into the kitchen to craft up what I call a sweet but lazy meal. In less than an hour you got everything ready. You can now relax as watch your favourite movie/series despite having a long day. Let’s dive into the kitchen and cook it up before we continue with our series.

CREAMY FRENCH BEANS MASHED POTATOES WITH MINCED MEAT

Ingredients
Creamy French Beans Mashed Potatoes
  • 1/4 kg of Potatoes
  • 2 Pieces of Garlic Cloves
  • 1/4 a Bunch of French Beans Commonly known as Mishiri in Kenya
  • 2 Cups of Milk
  • 1 tbsp of Blueband (margarine)
  • 1 tbsp of Cooking Oil
  • A Pinch of Salt
Minced Meat Stew
  • 1 Red Onion Bulb
  • 3 Pieces Of Garlic Cloves
  • 1 Small Piece of Ginger
  • 2 Tomatoes
  • 1/4 kg of Minced Meat
  • A Bunch of French Beans
  • 1 Bunch of Fresh Coriander (Dhania)
  • 1/4 tsp of Black Pepper
  • 1/4 tbsp of Paprika
  • 1 tbsp of Cumin Powder
  • 1 tbsp of Tomato Paste
  • 1 tbsp of Cooking Oil
  • A Pinch of Salt
Instructions
Creamy French Beans Mashed Potatoes
  1. Peel the potatoes, rinse them and soak them in cold water for five minutes to remove the excess starch
  2. Once the excess starch has been washed away, pour the potatoes in a different sufuria and place it on the fire and leave it to boil.
  3. Allow the potatoes to boil for 15 minutes ensuring it's tender and soft in a way that a fork can pass through easily. Once ready set it aside
  4. As the potatoes are boiling, crush the garlic and prepare the french beans by cutting the edges and cutting them into small pieces.

  5. In an empty sufuria, add the oil and let it heat up for some few seconds
  6. Add in the crushed garlic and allow it to fry for sometime till golden brown.

  7. Add in the french beans and allow it cook for about 10 minutes.

  8. Once ready, add in the boiled potatoes into the sufuria and mix them with the French beans until they are evenly mixed.

  9. Mash the potatoes until all potatoes are well mashed. As you mash add the milk bit by bit until the mashed potatoes are relatively soft and creamy. (Add more milk if need be according to the softness you would like for your mashed potatoes)

  10. Once ready, add the blueband (margarine) and mix it with the mashed potatoes.

  11. Cover the mashed potatoes and allow it to cook on very low heat for about 5 minutes.

  12. Once ready remove and serve.

Minced Meat Stew
  1. Chop the onion, tomatoes, coriander (dhania), and french beans into small pieces.

  2. In a pestle and mrtar, crush the garlic and ginger pieces.

  3. Once all ingredients are ready, in a sufuria add the oil and allow it to heat up for some few seconds.

  4. Add in the onions and fry till it's golden brown.

  5. Add in the crushed garlic and ginger, half of the coriander and black pepper into the sufuria and cook for about 3 minutes.

  6. Once they ready, add in the minced meat and allow it to cook for about 10 minutes or until it is well cooked.

  7. Add in the tomatoes into the sufuria and allow to cook until it forms a paste.

  8. Add in the paprika, cumin powder, salt and the tomato paste into the sufuria and cover the sufuria to allow the flavours to be infused by the other ingredients for about 5 minutes.

  9. Add in the french beans into the sufuria and allow it to cook for about 10 minutes till ready.

  10. Add in the remaining coriander into the stew and allow it to cook for 2 minutes.

  11. Once ready, remove from the heat and serve

This meal is easy and quick to prepare. The beauty of it is that, it does not involve the use of too many spices. To crown it all, it is safe for even your children to eat and enjoy from a very young age. I chose to serve mine up with my minced meat stew. This can also be served up with cumin curry green peas and your favourite fruit.
