CINNAMON AND CARDAMON MANDAZI RECIPE

Mandazi in Kenya is a household name. It is a meal that has been enjoyed for many years as an accompaniment for breakfast or during the 4 o’clock tea time. My sister and I became very accustomed to mandazi from the time we were very young. Thanks to my mother, who would always be home early to make us mandazi before we arrived home from school. We knew we could either find mandazi or pancakes at home.

This made us fall in love with the two. As we grew older, we joined mummy in the kitchen and she taught us how to make delicious mandazi. For today, I will be showing you how to make cinnamon and cardamon mandazi. Anything that has cardamon blows my taste buds. I couldn’t resist sharing this recipe with you, once I got to try it and test out in my kitchen and I loooved the taste. Let’s dive into the kitchen and start making them before our tummy’s rumble. Ingredients
  • 2 Cups of Flour
  • 1 Heaped tsp of Cardamon Powder
  • 1/4 tsp of Cinnamon Powder
  • 1 Egg
  • 1 Glass of Milk
  • 1/2 a Cup of Warm Water optional in-case the flour becomes too hard
Instructions
  1. In a bowl, add the flour, cardamon and cinnamon and mix them together. (Rule always put your dry ingredients first.)

  2. Break and beat the egg in a separate bowl. Add in milk and mix together.

  3. Pour in the egg and milk mixture into the bowl containing the flour. Mix all ingredients together and begin to knead the dough until it is firm and smooth. (Add in water if the dough is still very hard or add in more flour if the flour is very sticky)

  4. Apply 1 tbsp of oil onto the dough. Cover the dough with a cling film or a kitchen towel and allow it to rest for 10 minutes to ensure it becomes soft.

  5. Once the 10 minutes are over, prepare your cooking pan and add oil into the pan and heat the oil.
  6. Cut your dough into two portions. Roll out on a flat smooth surface one of the portions into 1cm thickness. Cut the mandazi into square shapes. Alternatively, you can also use a round cup and cut the dough into round shapes.

  7. Add in the mandazi’s onto the pan one at a time. Add in only the number of cuttings that can fit into your pan. Shallow fry the mandazi until it turns brown on one side then turn the other side and allow it to cook till brown.
  8. Once cooked, remove the mandazi’s from the pan and set them aside in a bowl lined with a kitchen towel or serviette to absorb the excess oil.
  9. Repeat the same procedure for the consecutive mandazi cuttings until they are all cooked.

  10. Vuala, your mandazi are now ready for munching. Easy peasy, right!

    Serve the mandazi with your favourite beverage either tea, coffee or hot drinking chocolate.
