BUTTERMILK/MAZIWA MALA NDENGU CURRY (GREEN GRAMS CURRY)

Buttermilk/maziwa mala ndengu curry, yes its possible. Its sounds crazy but once you get to have your first bite of it, you will question where you have been all this while. ?? Well that was my first reaction when I tasted the meal. It was one of those evenings while in school and I wanted to have ndengu (green grams) for dinner and my main intention was to make some coconut milk ndengu using my lentils (kamande) curry recipe.

However, I realized when it was quite late that I did not have coconut milk in the house and it was late to go to the shops which are also far off from the house. I knew I had maziwa mala (buttermilk) in the fridge and I decided to use it while doubting what I would end up eating. Thank fully, I managed to pull off a very delicious and sumptuous meal with it and that is how I have now been interchanging between using coconut milk and buttermilk in my ndengu meals. I won’t keep you wondering how to make it, how about we jump right in and prepare the meal.

Ingredients
  • ¼ tsp Cumin Seeds
  • 1 tbsp Cooking Oil
  • 1 Red Onion
  • 1 tsp Crushed Garlic and Ginger
  • 1 Bunch of Parsley/Coriander (Dhania)
  • 1 Cup of Chopped Carrots
  • 1 Courgette
  • 1 Green Bell Pepper
  • 2 Tomatoes Chopped
  • 1 tsp Black Pepper
  • ¼ tsp Cumin Powder
  • 1 tsp Paprika
  • 1 ½ tbsp Curry Powder
  • ¾ tbsp Tomato Paste
  • ½ Cup of Buttermilk/Maziwa Mala
  • A Pinch of Salt
  • 1 tsp Sugar
  • ½ Cup of Water
  • 1 Cup Pre-boiled Ndengu (Green grams)
Instructions
  1. Begin by preparing all your ingredients by chopping them and setting them aside.

  2. In a sufuria/cooking pot add in your cumin seeds with oil and fry for 1 minute

  3. Add in your chopped onions and fry until golden brown

  4. Add in your crushed garlic and ginger together with dhania/parsley stems and cook for 2-3 minutes

  5. Add in your chopped carrots with very little water, cover and let them cook for 5 minutes to soften

  6. Add in chopped courgettes and the green bell peppers (green hoho) let them cook for 2 minutes. Do not allow them to overcook.

  7. Add in the chopped tomatoes with the tomato paste

  8. Add in the spices (black pepper, cumin powder, paprika, curry powder and salt). Mix and cover and let it cook for about 3-5 minutes on medium heat until the tomatoes form a thick paste

  9. Add in your buttermilk/Maziwa Mala plus salt and sugar and mix together with the other ingredients. The sugar helps in reducing acidity in your meal caused by the tomatoes and tomato paste.

  10. Add in 1/2 a cup of water followed by your pre-boiled ndengu (green grams). Cover and let it cook for 5 minutes.

  11. Finally garnish with some dhania/parsley leaves and serve

Making Buttermilk/Maziwa Mala at Home

For those who do not have buttermilk/maziwa mala with you, you can make your own by using milk and lemon. In a bowl, add in your 1/2 a cup of milk followed by 1/4 cup of lemon. Stir and let it sit for about 5-10 minutes and you will begin seeing your milk form a curd-like substance. There you will have your buttermilk ready for use.

This is a simple recipe you can enjoy with your loved ones. It is easy to prepare and quick. With only about less than Ksh 200 ($2) you get to enjoy this tasty buttermilk/maziwa mala ndengu curry. You can serve and enjoy it with your favourite dish like turmeric ginger fried rice and chapati
